Super Chocolate Cupcakes with Cream Cheese Frosting are my absolute favorite. Not hard to make and soo good. Here's what you do:

Preheat the oven to 300 degrees. Line your cupcake pan. A few hours before you make them, leave out a stick of butter and an 8oz package of cream cheese to soften.

Boil 1 1/2 cups of water.
When it's boiling, mix together 1 cup of the boiling water and 2 cups of regular granulated sugar. Stir it for 3-4 minutes until a syrup is formed with absolutely no granules left. It's best to do this in a bowl.

In a big mixing bowl, put:
- 2 cups flour
- 3/4 cup cocoa powder (I use Hershey's or Ghiradelli)
- 1 tsp salt
- 2 tsp baking soda (not baking powder!!)
- 1 1/2 tsp vanilla extract
- 1 cup canola (vegetable) oil
- 2 eggs
- 3/4 cup milk
- 1/4 cup whipping cream
It's best to use an electric mixer (handheld or standing) for this. Mix it on low for a few minutes until it's all nicely combined.

Now take the syrup you made earlier and add it into the batter. Mix it some more.

Fill the cupcake pan cups about 1/2 to 2/3 full, depending on how big you want them to be.

Set the timer for 22 minutes BUT check them at 18. Do the toothpick test- stick a toothpick into the middle and if it comes out clean (with no wet batter on it), they're done. Even if they don't look like it.
Let them cool for an hour or so- until they don't feel warm to the touch. While you're waiting, you can make the frosting.

For the frosting:
Take the stick of butter and 8oz package of cream cheese you softened earlier, and put them in a big mixing bowl.
Mix with an electric mixer for a while.
Add 2 tsp vanilla and 2 cups of powdered sugar (you might wanna add it gradually so it doesn't get everywhere) and mix some more.
Add 1/4 cup whipping cream and mix for 2-3 minutes until fluffyish.
Cover and put into fridge.
If you'd like, you can also add some food coloring (I like making it pink).

When the cupcakes are cool, frost them, add sprinkles or whatever you want and enjoy :)

*** I can't take credit for this recipe- it's Kandee Johnson's. She's a makeup artist/Youtube guru, and I learned how to make these cupcakes from this video of hers:

If you'd like more recipes- I also have a really good one for snickerdoodles- let me know in the feedback.
