I got an espresso maker for christmas. I've watched some videos on how to make various espresso drinks. I keep seeing crema forming on the top of the espresso pulled in how-to videos. I have a cheap machine by espresso standards, but very expensive for me($70). What sort of things can I do to ensure I get crema?

Maybe give some free advice about: Cooking? sia answered Sunday January 24 2010, 6:14 pm: the crema is the hardest thing to learn.you need alot of practise to get it right.you need to make sure that you ddo not burn the milk and over do it...ok im going to try and explain this as best as possible but its much easier to show someone rather than tell them.
first pour the milk in your metal tin half way up.
ok so you have this metal nodule thing on the side of your machine that blows out hot forced air.that nodule needs to be in the milk but close to the surface of the milk.so dont put the nodule all the way to the bottom of the milk tin.
hold the tin on an angle and switch the nodule on.after a few seconds if your holding the tin correctly you will hear a scretching sound coming from the milk.if you cant hear it then you need to move the tin on a different angle so that you can hear it.then when you look at the milk it should be turning in a circular motion.have your finger under the tin and when it gets to the point that you cant keep your finger under the tin because its too hot thats when you should switch the nodule off or else you will burn the milk.
