Meat Department

Question Posted Saturday May 23 2009, 10:58 pm

I work at a meat department (not a full service one where we cut the meat..the meat comes packaged and we stock it..but we do have steaks and such) and I don't really cook so I don't know what the best kinds of meat are for different things.. One of my things on my evauluation was to learn more about the actual meat..like what you use it for and how you cook it and stuff.. Is there a website I can get this kind of information from? Or even a book or something that someone knows of.. It would be a really big help.. Thanks in advance =]

Most places won't hire someone for their meat department unless they already know that kind of thing... so, just a wild guess given the meat isn't cut in-house: Is it WalMart?

Here is what you need:

Lobel's Meat Bible: All You Need to Know about Meat and Poultry from America's Master Butchers (Hardcover)

[Link](Mouse over link to see full location)

... that is THE book for someone in your position.

... unless you need to know about seafood/fish, which you probably do, so that leaves you out in the cold knowing everything in the world about meat and poultry but nothing about fish/sea foods... or does it?

Nope. Because you asked your question in the right place. :-)

From Tide to Table: Everything You Ever Wanted to Know About Buying, Preparing, and Cooking Seafood (Hardcover)

If you read these two books you will probably know a heck of a lot more than your boss does about meat, poultry products and fish/sea food.

Enjoy!
