Salmon steaks in sushi

Is it safe to use any old salmon steak from a reputable market in my sushi, or should I stick to the stuff from the Japanese market?

Just make sure they know it's for sushi, so they give you the (for lack of a better word) safest stuff. You are eating it raw, after all.

As long as it all appears freash, I see no problem. I use fish from Central Market (think super-HEB) in my sushi, and it's just wonderful. It's both inexpensive and easy to find. However, for specialty or hard-to-find fish, I suggest the Japanese market.

Your one word description of the market says it all. REPUTABLE. I don't see any reason not to buy from them if you trust them and obviously you do. Try it...if it doesn't satisfy, then go back to what does, but a try wouldn't hurt.
